Royal Baerii - Acipenser baerii
Derived from the Siberian Sturgeon (Acipenser baerii), this caviar delivers a delightfully salty flavour profile while offering fantastic colouration and pearl size, perfect for making an impression.
The relatively small egg size provides an excellent option for use across a larger quantity of dishes whilst still appearing to be substantial in volume on the plate giving a greater yield in pearls per gram than other caviar options.
Siberian sturgeon is increasingly farmed both for its meat and to produce this exceptional caviar from its roe. Its lifecycle is completed in fresh water and sexually matures relatively early, making it the most common original broodstock for captive-bred specimens.
These fish usually weigh around 65kg, with considerable variability across location, however the maximum recorded weight for a Siberian Sturgeon is a whopping 210kg.
This is the ideal caviar for both a luxurious aesthetic and deliciously salty flavour on dishes.
