Oscietra - Acipenser gueldenstaedtii
The Russian Sturgeon (Acipenser gueldenstaedtii) - also known as Diamond Sturgeon - offers one of the most widely known and used caviars in the world, Oscietra. Its rich yet balanced flavour profile and slightly larger egg size than the Baerii deliver a striking aesthetic on dishes along with an enhanced taste for canapés and larger dishes alike.
These fish mature and reproduce slowly and can be distinguished from other Acipenser species by their short snout which features a rounded tip as well as a lower lip that is interrupted at its center.
Acipenser gueldenstaedtii is renowned for its excellent egg quality and is largely considered second only to that produced by Huso huso (Beluga). Its grain has a slight nutty flavour with a soft flavour that will delicately linger on the palate.
Colours can range from dark grey and dark olive to golden brown and offers pearls measuring up to 2.9mm. This caviar is classified as ‘Malossol’ which literally means ‘lightly salted’ with a salt content less than 4%. This allows the flavour of the caviar to shine through.
